Black Bean and Spinach Enchiladas




Black Bean and Spinach Enchiladas

Part of our Magnesium Food Series to promote relaxation and better sleep.

Ingredients:

  • 1 cup cooked black beans (120 mg magnesium)
  • 1 cup cooked spinach (157 mg magnesium)
  • 1 avocado, sliced (58 mg magnesium)
  • 8 small whole wheat tortillas
  • 1 cup enchilada sauce
  • ½ cup shredded cheese (optional)
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Instructions:

  1. Preheat oven to 350°F.
  2. In a pan, sauté cooked spinach and black beans with chili powder, salt, and pepper.
  3. Place the mixture into tortillas, roll them up, and lay them in a baking dish.
  4. Pour enchilada sauce over the tortillas and top with cheese if desired.
  5. Bake for 15–20 minutes, until heated through. Serve with avocado slices.

Magnesium per serving: ~290 mg
